im looking to cook a 2 course? and i know he luvs fish so…please? ideas? im ok at Cooking, i shall enlist a friends help if the ideas i get are waaay outta my league. thank u!

When I go to my girlfriends house, I hate it when she makes veggie dishes! I try to be polite and not gross her out when I eat, so she doesn’t break up with me, but I eat a lot. (hence the small portions with lots of it)

Well for one if you know what type of foods he like then htat gives you a idea! You acually should cook the fish with somethin to make it special and also if there is any ohter food he likes you should fix that food for him!!

Flounder.
Remove head and tail from flounder, scale if it has not been.
Rinse well and pat dry and make two diagonal slashes across the back (top) of the fish and rub with a sprinkling of salt and some good oil on both sides.
Grill (broil) 5“-6” from heat until cooked, or
Bake at 180C for about 10 minutes.
Serve with roast potatoes, and parsnips with green peas, covered with a creamy parsley sauce.

Why don’t you have a fish starter and then something you’d both like for main. Smoked salmon is lovely and you could serve it with creme fraiche, black pepper and capers so it doesn’t even need cooking! Or scallops are lovely…just bake/fry them with a bit of butter and garlic mmmmm

For the main, you should make up a lemon grilled fish with a greek salad and a potato mash with a little lite sour cream and chives, always goes down well I find..
4 (150g each) white fish fillets (such as hake), skin on
1 lemon, rind finely grated, juiced
2 teaspoons olive oil
Tomato
Fetta Cheese
Spanish (Red) Onion
Capsicum
Greek Salad Dressing
Potato
Lite Sour Cream
Margarine/Butter
Milk
Chives
Method
Chop up the tomatoes, capsicum and red onion.. leave the fetta cheese closer to serving time as it tends to dry and same with dressing as it can make the salad start to wilt if left too long..
Get mash potato on first – put a pan of water with lid on high heat, once boils add chopped potato pieces (cut in half and then quarter each half) let it cook for 25 minutes, drain water and return it to low heat.. add in a tablespoon of butter and mash it up, add a tablespoon of low fat sour cream and half of bunch of finely chopped chives, along with a tablespoon of milk and mix it up well.
About ten minutes after the potato is in..
Place fish in a shallow ceramic dish. Place lemon rind, 2 tablespoons lemon juice and 1 teaspoon oil in a small jug. Whisk to combine. Season with pepper. Pour lemon mixture over fish and turn to coat. Cover. Set aside for 10 minutes.
Preheat grill on medium heat. Line a grill tray with foil.
Just before drain potatoes..
Place fish on grill tray. Cook for 4 to 5 minutes (depending on thickness) or until just cooked through.
And serve..
You should do a dessert as well if you want to do a two course meal..
Depends on what you like but would suggest a cake, cake and custard (can get store bought at a reasonable price and still tastes nice – takes pressure off considering cooking dinner), icecream and a baked dessert from the freezer section – like a strudel, apple pie etc.. frozen cheesecake..

Sage and garlic stuffed chicken breasts rolled in panchetta:
Ingredients :
Sage
Garlic
Butter
Chicken Breasts
Basil (optional)
Panchetta (3-4 slices per chicken breast)
White wine (optional)
Method:
1. Chop sage and garlic and mix with the butter. This is going to go inside your chicken, and as butter melts make more than you think you will need.
2. Cut chicken breast down the middle, but don’t completely seperate it. Spread pleanty of the sage and garlic butter inside the chicken and if you want put 1-2 whole basil leaves inside too.
3. Each chicken breast will need 3-4 slices of panchetta. Lay the slices out in a line, so they are overlapping the other pice by half or a bit less. Roll your chicken breast up in the panchetta, and press so it all sticks together.
4. Line a tray and put the chicken breast in the bottom along with 1/4C white wine (optional). Cover with foil and bake for 15mins at moderate, then another 15 mins (or until brown) uncovered.
5. Cut into thick slices to serve.
My advice is to make one chicken breast per person.

I love fish too. What about some pan fried salmon, with dill cream sauce? Some baked whiting or cod? Serve either with new potatoes and such as broccoli.

Well you could cook some tilapia in the skillet and squirt some lemon juice on them. And fry some onion rings with it. That sounds delicious

try tilapia…its a mild fish and hard to mess up. my husband is from mexico and loves me to prepare his with lots of fresh squeezed lemon juice, easy salt and pepper, and garlic. Then i lightly fry it in a light tasting oil. When its done squeeze a bit more juice over each side garnish with cilantro and serve with sallad and or a potato dish. you might even try baking fries instead of frying them as a side.
