The joy of cooking is the time you spend in the kitchen to prepare a meal for those people that you care for and love. However, the joy of cooking is something that is passed from one generation to the next because it involves learning specific family recipes. And before you know it you, the one who once didn’t know that there was such a thing a “the joy of cooking”, are the one spreading the joy and leaning others the true joy.

I left some food in there, then forgot about it for a few days. I washed the cooking pot, but the smell is still there. How can I get rid of the smell?

I would worry about any surface that retains a smell after being thoroughly washed.

I seem to be able to remove almost any order with either white vinegar or with baking soda. Use full strength.
You should also be careful about leaving Food around for days. It will attract pests like insects and mice.

I am 36 and live by myself and I usually don’t go to much trouble when preparing meals.

I also don’t have very advanced cooking skills, and I am always taken aback when I see recipes that need 10 ingredients, etc, and an hour to cook them.

Would you have any simple recipes that you enjoy, which involve only a small number of ingredients?

For example, is there anything that you taught your children to cook, before they left Home?

All the best and thanks very much for your help!! :)

PS I need to eat more vegetables!

This is not a joke but maybe you should go to the bookstore or library & buy the book

Tips of Cooking Meat

Posted by admin | 03/06/10 | Tagged Cooking

Summer is here and if you are anything like me, you don’t want to turn on your oven or stove unless absolutely necessary. I do most of my cooking in the microwave during the summer months. It helps keep my home cooler and cuts down on my cooling bill.

I have found that many people don’t like to cook meat in the microwave. I was once one of those people. Chicken would come out like rubber and I always worried that ground beef didn’t cook thoroughly. I have since found that the trick is to use the right cooking utensils.

There has also been some hype about how it’s not safe to use plastic to cook meat or anything else in the microwave. This is only half true. Certain types of plastic have chemicals that are activated with the extreme heat of the microwave and these chemicals can get into your food. For more detail go to: www.bread-machine-cookbook.com.Hence, the key to cooking in your microwave is, once again, to use the correct cooking utensils. Basically, use containers that are specifically designed for cooking in the microwave.

My preference in microwave Cooking is Tupperware. Their cookware is specifically designed for the microwave so you don’t have to worry about the chemicals. Their Oval Cooker is designed to retain the moisture of your meat so that your meat doesn’t come out dry and rubbery. It also has a colander so you can brown your meat and let the grease drip to the bottom. That makes it easy to dispose of the grease drippings or use them for gravy. Tupperware also backs it cooker with a lifetime warranty so if it breaks I can just replace it with a new one, which seems like a good investment to me.

So the instructions I am providing below apply to the Tupperware Oval Cooker. If you feel confident using a different type of microwave cooker, of course, try that, but please make sure you follow the guidelines I stated above.

Cooking Ground Beef Place the ground beef with your favorite seasoning in the colander of the cooker. Cover and cook for 6 minutes per pound. Let sit a few minutes then remove from the microwave. By using the colander all the grease will drain to the bottom of the cooker.

Cooking a Whole Chicken If using the Oval Cooker you will need to use the extender piece for your average size chicken. Then place the chicken in the cooker. Pour about half a cup of water on the bottom of the cooker. For more detail go to: www.delicious-sandwich-recipes.com.Sprinkle your chicken with your favorite’s seasonings. Place the cover on the cooker and cook for 6 minutes per pound. I think you will be surprised at how moist your chicken comes out.

Cooking Cut up Chicken After cutting up your chicken use the same instructions for cooking a whole chicken. Determine by how high the chicken stacks if you will need to use the extender or not.

Cooking Chicken Pieces You can use the colander to cook chicken pieces. Cut the chicken into bit size pieces. I usually use chicken breast cutlets for this. Place the cutup chicken pieces in the colander. Season with your favorite seasonings. Place the cover on the cooker and microwave for 6 minutes per pound.

For making my home-made macaroni m cheese – what should I use to coat the pasta – double cream or single cream? I used double before and it tasted really good, but dont know the difference between the two for cooking purposes.

Double is thicker with a higher fat content.

I really enjoy cooking and I love finding new recipes. But it seems that when I find a recipe I really want to try, I’m missing alot of the ingredients.

What ingredients do you stock up on and make sure you always have?

Serious answers only please!

I keep a well-stocked pantry – pasta (several shapes & sizes), rice, couscous, oil (Cooking & evoo), vinegar (balsamic etc), some canned goods – olives, tomatoes (San Marzanos, diced or tomato sauce & paste), artichokes, herbs/spices, garlic, onions, potatoes. I prefer fresh ingredients, but keep some frozen veggies – brussels sprouts, broccoli just in case. I have several salad dressings, as I’m a big salad fan. Some canned fruit (although I prefer fresh). Won ton wrappers for a quick meal or appy – flour tortillas, whole wheat bread & bagels. Fresh fruit (whatever is in season) & avocados. Meat & poultry – just in case – I keep a bag of frozen chicken breasts, ground beef, & shrimp.

Do you prefer the cook to be talking, or a voice-over? What things about cooking shows annoy you?

Tell me about your thoughts on what makes a cooking show enjoyable to watch.
The reason I’m asking is because I want to make a little show based off of my great grandmothers cookbook. I’d really like to share with people, and hopefully help others, and keep older recipes like her’s alive.

Well, first of all I enjoy watching a talented person cook with passion and knowledge of food and recipe complexity or simplicity. Secondly, I look for basic cooking skills, (ease of use with all of the kitchen utensils and vessels, sanitary procedures, timing, organization and most importantly, knowledge of food) I prefer hearing the Chef or cook speak, about the food and/or recipe with a little added family history edited in (food=family, in my opinion, and I want to hear that, but not overdone). What really catches my eye on any cooking show that I watch is menu creativity, taking a dish and making it your own, but not with only one style of cuisine, but a broad based knowledge of all flavors, seasonings, cooking techniques and availability of the ingredients of that particular recipe. I think relaxation and humor are an important part of Cooking, it should be enjoying, not stressful. You should be able to make little mistakes, but not be overwhelmed by them, the Chef/Cook should be personable, knowledgeable and informative in a comfortable surrounding. Things that annoy me: Well, I’ll try to keep this short. Lack of food knowledge,(this is a biggie for me) unsanitary cooking procedures, stress, too much story and not enough cooking, use of such rare ingredients that you won’t ever have available to cook with, canned items (some, not all) use of prepackaged items and a couple of fresh items (I did this in the Marine Corps, did I get a show?) is a huge turnoff, because we’ve all done that, saying "I don’t know" about one thing or another, being negative (always turn it into a positive, it’s so easy), so that’s it for now, but I’m sure the list would be longer if I didn’t have to get my laundry out of the dryer!
Anyways, I wish you all the very best in your futrue cooking show and I totally agree, older recipes need to be kept alive and well! I’m sorry this has grown to be a small novel, but just like you, food happens to be a passion and love of mine! Have a great day and thanks for asking!

My niece just called and asked if I had ever had my food turn black when I was Cooking in my cast iron cookware. She has seasoned it like she is supposed to but her food is still turning black. Anyone ever had a problem with this?
Yeah it is really cast iron. I told her that she may not her gotten it seasoned adequately..I’ve also heard that if you boil water in it that can happen.

Well either the fire is up to high or black specks are coming off. Ive done both.
